As winter loosens its grip, the kitchen begins to shift.

This episode of The Second Cut explores the quiet moment between seasons — when the last comforts of winter meet the first signs of spring. Traditionally known as the hungry gap, this is a time when winter stores run low and the earliest wild greens begin to return.

Across six courses, the menu moves from deep, warming flavours to the brightness of the new season. Nettles and wild garlic signal the first growth in the hedgerows, while humble cuts and rustic dishes are reimagined with care and technique — including a refined take on shepherd’s pie.

First Thaw is a menu rooted in seasonality, nostalgia, and craft — celebrating the moment the kitchen begins to wake again.
